Stir Fried Monkfish with Red Curry paste

This pan fried monkfish curry is a very simple dish to make but delicious to eat.

Ingredients list: Stir Fried Monkfish with Red Curry paste 

Serves 4:

  • 1 1/3 lb (600g) monkfish tail
  • 2 cups (50cl) coconut milk
  • 2 onions
  • 1 Tablespoon red curry paste
  • 1 Bunch cilantro or thai basil
  • 2 tbsp oil

Cooking instructions

Fry the chopped onions in hot oil then book.
Cut the monkfish tail into medium sized pieces, put them in the hot pan with the curry paste. Coat all pieces and pour the coconut milk. Add salt, onions and simmer for 30 minutes.
