Here’s an easy and tasty potato salad with crispy bacon and fresh chives. The spiced-up seasoning is what makes this simple dish perfect for evening meals outside on the terrace!

Bacon Potato Salad
This bacon potato salad is flavorful and perfect for picnics.
- 1 1/2 lb (700g) of potatoes
- 4 slices of bacon, cut into strips
- 1 leek
- Mustard
- Wine vinegar
- 2 tablespoons oil
- Salt and pepper
- Chives
Instructions
- Gently clean the potatoes before cooking them for about 10 minutes in boiling salted water.
- Plunge potatoes into iced water to stop cooking, drain and set aside in a bowl.
- In a nonstick skillet, cook bacon over medium heat for 5 minutes.
- Add the leek and cook until bacon is crisp and leeks are tender.
- Cut potatoes into cubes, keep their skin.
- Add leeks and bacon to it.
- In a small bowl, whisk mustard and vinegar.
- Add olive oil and season to taste with salt and pepper.
- Pour the salad dressing into the bowl.
- Stir and garnish with chives.
- Serve yourself and enjoy!
