Lemon Grass Cherry Soup

Ingredients list: Lemon Grass Cherry Soup

For 1lb (500g) of cherries:

  • 2 Lemongrass stalks
  • 4 tbsp sugar
  • Pepper from the mill

 Cooking instructions

Remove the dried leaves of the lemongrass and detail the soft parts into pieces. Book 4 sections and chop them finely.
Boil 5fl oz (15cl) water with sugar and lemon grass. Let shiver for 5 min then let infuse for 15 minutes, covered.
Filter the syrup using a thin strainer then it pour it over the cherries. Let completely cool and serve with pepper from the mill.
