Directions

1. To make the spinach mushroom quinoa skillet: Cook quinoa in salted water until al dente, according to the package instructions.

2. In the meantime, heat 2 tablespoons of olive oil in a large skillet. Add the quartered mushrooms and sauté for about 3 minutes until lightly browned.

3. Add the chopped garlic and cook for about 30 seconds longer. Then deglaze with a bit of vegetable broth. Reduce the heat and cook for about 1-2 minutes longer. Remove mushrooms to a plate and set aside.

4. In the same skillet, add minced onion and cook for one minute, until transluscent. Add the spinach and cook for 2 minutes until wilted. Adjust seasoning with salt and pepper.

5. Once the quinoa is ready, pour off the cooking water. Push spinach on the side in the skillet and add mushroom back, then put cooked quinoa in the pan and toss to combine. Add parmesan, red chili pepper flakes, and Italian seasoning and give a quick stir. Serve the spinach mushroom quinoa with red chili pepper flakes and more parmesan, if you like. Enjoy!

Can we freeze the quinoa with spinach and mushrooms?

We don’t suggest this quinoa recipe for freezing. The sauce will get absorbed into the quinoa, leaving it dry. If you reheat refrigerated leftovers, you may want to add a little olive oil to compensate for what has been absorbed into the quinoa while sitting in the refrigerator.

    This is LOADED with flavor. Although I’m not entirely sure how bc there isn’t a lot of spices. I took someone’s suggestion and added miso (well soy sauce…close enough). That was a great decision. 1/2cup of parm is insane, I used 1/4 c and it was PLENTY. Last, in the recipe list it says 3tbsp but the instructions say 2. I used 2 and it was enough. I will try the lemon suggestion next time, again I’m not sure how this has so much flavor but it does and lemon would be a bright addition. 10/10

    On my third bowl! 😋 3 suggestions: -added a spoonful of miso to quinoa water - more spices (incl marjoram) -MUST sprinkle with fresh LEMON!

    I was expecting this to take longer to make, and it was done super quick! Tastes very good and I put extra mushrooms only because my hubby loves them but there’s so many variations you could do. Is this recipe I really like it! Very versatile and the Italian seasoning gives it a very good flavor, I’d like to try using the Herbes de Provence, I love the combination in that season as well 🙌🏻

    I thought this recipe was great and easy. I substituted bok choy for the spinach since that’s what I had in hand. I added all of the broth to the mushrooms, removed them with a slotted spoon, then cooked the onion and bok choy in the remaining broth. I’m surprised to see people saying this was flavorless. I disagree but maybe it’s because I used all of the broth.

    Very yummy! I used stock for the quinoa and added salt due to being dairy free and used nutritional yeast instead of Parmesan. I’m sure it’s even more amazing with cheese! I deglazed the pan with some wine instead for extra flavor and glad I did! Waiting for hubby to get home to get a second verdict on the recipe. Very fast too. By the time my quinoa was done the other pan was too; perfect!

    This recipe is a bit fantastic! I followed to a T and then, adjusted a few things after it was done! Added a few drops of liquid smoke, and a bit more onion, and parmesan! I have never in my life left a review for a recipe, and this one is 100% worthy of it!

    This recipe calls for 1/2 cup of vegetable broth but the directions never instruct you to use that broth. The only mention is for deglazing the pan using a bit of the broth. I decided to add the broth after all of the ingredients were cooked and in the pan. I also added about 3 times the amount of herbs as otherwise it was very bland. I really liked this dish after I made these adjustments.

    I thought this was a little flavorless. It needs something to spice it up maybe along the line of cumin.
