Ideal for a summer barbecue accompaniment, a snack, or just a moment of pure greed… This recipe can be eaten hot or cold. The cherry tomatoes are fried with a little olive oil and sprinkled with basil leaves. The slices of pancetta are crispy grilled and bring the salty side. Finally, a little mustard vinaigrette will take care of the shabby side.

Ingredients: Sautéed Cherry Tomatoes
For 4 people
- 1lb (500 g) cherry tomatoes
- ½ bunch of basil
- 12 slices of pancetta
- 1 tbsp. of mustard
- 3 tbsp. of olive oil
- Salt and pepper
Cooking instructions: Sautéed Cherry Tomatoes
Wash and dry tomatoes. Cook in a skillet with a little oil for 5 to 8 minutes, until they become soft. When cooked, add the whole basil leaves and mix.
In the oven, on a plate lined with baking paper or a silicone cloth (type exopat), spread the slices of pancetta and cook for 8 minutes at 480° F (205°c). Remove from the oven and place the slices on paper towels.
In a bowl, mix the mustard and olive oil. Season with a little pepper. You can add some vinegar and salt if needed. Enjoy!
