Show your colors this summer with these refreshing strawberry and blueberry margarita popsicles! Dairy-free and gluten-free, they are made with a few ingredients and no artificial flavors! The perfect refreshing treat for your 4th of July party! The popsicles are very quick to prepare, but will need a few hours to freeze, so plan accordingly. If you prefer an alcohol-free version for kids, omit the Tequila – the popsicles will still be delicious!

Ingredients list for the margarita popsicles

  • 6 oz (170g) blueberries
  • 6 oz (170g) strawberries, hulled and sliced
  • 1/2 cup sugar or your favorite sweetener
  • 1/2 cup (125ml) water
  • 1/2 cup (125ml) coconut milk
  • 3/4 cup (180ml)  lime juice
  • 6 tablespoons tequila

Directions

1. To make the margarita popsicles: In a small saucepan, combine sugar and water. Heat over medium heat until the sugar is completely dissolved. Then, remove from the heat and allow the syrup to cool to room temperature.

2. Once cooled, pour syrup into a large bowl. Squeeze the lime juice into the bowl, add the tequila and coconut milk, and mix until well combined.

3. Pour into popsicle molds, filling a little more than 3/4 of the way up.

4. Toss one 3 – 4 strawberry slices and about 8 blueberries into each mold. Fit with a popsicle stick and freeze for a minimum of 4 hours, preferably overnight. 

5. When ready to serve, unmold the margarita popsicles gently from the popsicle molds and arrange on a tray filled with a layer of ice cubes for a nice presentation. Enjoy!

Tips for the margarita popsicle recipe

  • I recommend using freshly squeezed lime juice for this recipe. The flavor is brighter! Roll the limes on the counter, pressing them with the palm of your hand before slicing them in half; this will make them easier to squeeze.
  • Add a splash of Grand Marnier or ginger liqueur for a nice twist in flavor.
