Ingredients list for the Grilled Chicken Recipe

  • 1 1/2 pounds (750g) boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1/4 cup honey (Optional for Low-carb and keto diet)
  • 1/4 tablespoon lime juice
  • 2 tablespoons Chipotle seasoning
  • 1/2 teaspoon salt

Directions

1. Whisk together all of the honey chipotle marinade ingredients in a shallow dish. Add chicken breasts to the marinade and allow to sit in the refrigerator for 1 hour.

2. When ready to cook, heat a large non-stick skillet over medium-high heat. Add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned on one side.

3. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 4-6 minutes, depending on the thickness of the chicken, until cooked through.

4. Remove chicken from the skillet and allow to rest 5 minutes covered before slicing. Serve the grilled chicken in salads, taco bowls, wraps… and enjoy!

Tips for the grilled chicken recipe

  • The longer you let chicken sit in the marinade, the more tender it will be – 1 hour is just a minimum!
  • You can cook the remaining marinade in a saucepan and drizzle it over the chicken, or serve it on the side.
  • You can use an indoor or outdoor grill. Just make sure to heat the grill enough to get these nice char marks!
  • If your chicken breasts are thick, they tend to become rubbery as they cook. Slice them horizontally to make thinner chicken cutlets. Pound them with a mallet if necessary.
