Ingredients list for the Grilled Chipotle Lime Chicken
- 1 1/2 pounds (750g) boneless skinless chicken breasts
- 3 tablespoons olive oil
- 1/4 cup honey (Optional for Low-carb and keto diet)
- 1/4 tablespoon lime juice
- 2 tablespoons Chipotle seasoning
- 1/2 teaspoon salt

Directions
1. Whisk together all of the honey chipotle marinade ingredients in a shallow dish. Add chicken breasts to the marinade and allow to sit in the refrigerator for 1 hour.
2. When ready to cook, heat a large non-stick skillet over medium-high heat. Add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 4-6 minutes depending on thickness of chicken, until cooked through. Remove chicken from the skillet and allow to rest 5 minutes covered before slicing. Serve in salads, taco bowls, wraps… and enjoy!
Notes:
- The longer you let chicken sit in the marinade, the more tender it will be – 1 hour is just a minimum.
- You can cook the remaining of the marinade in a saucepan and drizzle over chicken, or serve on the side.
