Ingredients list for the cabbage salad

  • 4 cups mix of green cabbage, red cabbage, and carrots, shredded or grated
  • red bell pepper, finely sliced
  • scallions, sliced
  • ½ bunch cilantro, chopped (or use basil and mint)
  • jalapeño, seeded and finely chopped
  • 1/4 cup roasted, crushed cashews

The dressing

  • 1 small knob fresh ginger, grated
  • 1 fat clove garlic, grated
  • ¼ cup (60ml) fresh orange juice
  • 3 tablespoon fresh lime juice
  • 2 tablespoons Coconut Aminos (or soy sauce if not gluten-free)
  • 3 tablespoons honey or agave
  • 3 tablespoons toasted sesame oil
  • ½ teaspoon cayenne pepper ( or a dash of sriracha sauce)
  • ½ teaspoon salt

  • Place the cabbage with its flat, cut-side facing the cutting board. Cut the cabbage halves into quarters. Cut out the core and discard.
  • Turn the pieces so a flat side is on the cutting board, and slice them as thinly as possible, working your way across each quarter using your knife. From there, you can keep the chopped cabbage as is or chop it even further.
