Ingredients list for the Potato Gnocchi in Bacon Spinach Cream Sauce

  • 1 pound (450g) gnocchi
  • 2 strips of bacon
  • 1 tablespoon butter
  • 2 shallots or 1 small red onion, minced
  • 2 or 3 clover garlic, minced
  • 1 teaspoon red chili pepper flakes to taste, optional
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt and fresh cracked pepper
  • 1 large tomato, diced
  • 3/4 cup vegetable or chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup parmesan, grated
  • 2 cup fresh spinach
  • 1/4 cup basil leaves, for garnish

Directions

1. In a large pot of boiling water, cook gnocchi until they float to the surface. Drain immediately and set aside without covering.

2. In the meantime, saute the bacon in a skillet until crisp. Remove to a plate and discard the extra fat but keep the brown bits.

3. In the same skillet over medium heat, saute minced shallot (or onion) and garlic in one tablespoon butter until fragrant. Add gnocchi and gently brown them on all sides for 5 minutes. Season lightly with Italian seasoning, salt and pepper, and red crushed chili pepper, if using.

4. Add diced tomato, cook for one minute, then stir in chicken or vegetable stock. Bring sauce to a low boil and simmer for 1-2 minutes, add cream and grated parmesan and cook for one-minute stirring continuously until smooth.

5. Stir in spinach, let it wilt, and add bacon back to the skillet. Adjust seasoning and serve immediately, garnish with basil leaves and garnish with grated parmesan. Enjoy!

    So delicious! I've never cooked gnocci at home before but felt these ingredients were a great match! I replaced the cream with marscapone and it was delicious!! A must make for a nice hearty and rich weekday comfort meal.

    Great dish that came together for me in under 30 minutes. The taste! Wow. Mine was a hint on the salty side so next time will reduce the salt overall but amazing taste with not hard to find ingredients, wasn’t complicated, came together quickly, and worthy of being something I serve to guests. Highly recommend

    Ok so this was the best dish I’ve made in a hot minute. It literally tasted like a deconstructed perogy. I used gf gnocchi. I’m also dairy free so instead of cream I used unsweetened cashew milk whisked with olive oil, and then added a dallop of vegan unsweetened yogurt. I also threw in some Italian sausage to increase the protein. I would suggest not adding ANY salt until the end when you taste it because I found it quite salty, but still enjoyable. We literally ate this up so hard. Couldn’t stop going back to the pan to have a few bites. Love love
