How to make the gnocchi and broccoli stir fry

Start by cooking the gnocchi as per package directions and shorty boil broccoli for one minute in the end. Drain, rinse, and pat dry. Add cooked gnocchi and sauté until crisp and golden, about 3 or 4 minutes. Add the garlic, pine nuts, and red chili pepper flakes. Add the broccoli and continue stir-frying until crisp-tender. You can deglaze with a tablespoon of water or vegetable broth. Sprinkle with basil and parmesan, and serve immediately.

1. To make the gnocchi and broccoli stir-fry: In a large pot of boiling water, pre-cook the gnocchi according to the package directions. Add the broccoli florets at the last minute. Remove from heat, drain, and rinse the gnocchi and broccoli.

3. Add the blanched broccoli to the skillet with the gnocchi and continue cooking, stirring regularly for one or two minutes – until the broccoli is crisp, tender, and coated with the infused butter. You can deglaze the gnocchi and broccoli with a tablespoon of water or vegetable stock.

4. Add the garlic and pine nuts back to the skillet, sprinkle half the parmesan, and give a quick stir to coat well. Remove the gnocchi and broccoli from the pan and serve the gnocchi and broccoli stir-fry with remaining grated parmesan and chopped basil or parsley. Enjoy! ❤️
