Directions
1. To make the baked feta gnocchi: Preheat your oven to 400ºF (200ºC). Add grape tomatoes to a baking dish. Add minced garlic, drizzle with olive oil, season with salt and pepper and toss to coat.
2. Make a well in the center of the tomatoes and add the block of feta. Season with pepper and Italian seasoning and bake for 30-35 minutes or until tomatoes are juicy and most of them have burst or are about to burst. Broil for the last 1-2 minutes to get a nice golden brown color, if desired.
3. In the meantime, prepare the gnocchi according to package directions and set them aside.
4. Remove the baking dish from the oven and add half of the basil then stir with a spoon until the tomatoes and feta are nice and creamy.
5. Stir in the cooked gnocchi and toss to coat again. Top with remaining fresh basil and season with red chili pepper flakes and black pepper to taste. Serve the baked Feta gnocchi immediately. Enjoy! ❤️
