Directions

1.  To make the Garlic Lemon Chicken Thighs: In a medium bowl, combine cilantro, 4 tablespoons olive oil, minced garlic, lemon juice, lemon zest, chicken bouillon, chili powder, chili pepper flakes, cumin, salt, and pepper. Divide the mixture into two.

2. In a gallon size Ziploc bag or large bowl, combine chicken thighs and half the marinade mixture; marinate for at least 2 hours or overnight, turning the bag occasionally. Drain the chicken thighs from the marinade.

3. Heat the remaining 1 tablespoon olive oil in a cast-iron grill pan over medium-high heat. Add chicken thighs to the grill pan in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165ºF (74ºC), about 4-5 minutes per side.

4. Serve immediately the Garlic Lemon Chicken Thighs with the remaining lemon-garlic-cilantro mixture on the side. Enjoy!

  • Use a large skillet to cook the chicken thighs. Ideally, you’ll be using a skillet that can comfortably fit all of your chicken thighs in one batch. We recommend a cast-iron skillet because it better holds and diffuses the heat.
  • Give your skillet time to warm up a bit, so that when the marinated chicken thighs hit the pan you’ll get that nice sear.

    I made this for my family and let me tell you, A++++ this is a MIRACLE dinner. I’m not going to lie, I’ve made the 3 men in my life recipe after recipe which resulted in fail after fail. Neither my husband nor my 6 year old nor my 2 year old would eat them. I’m not a bad cook—but I was started to think I’m the worst wife/mom ever. I found this recipe and just decided—what the heck—and surprised my family with it. My husband was skeptical but it is now HIS FAVORITE. He every left me a note the next morning saying it was the best meal he’d eaten in a long time. He also joked it could be served in a restaurant. I’m serious guys. Cool this recipe. Also, I didn’t change a thing! THANK YOU!!!
