Here’s an easy and tasty potato salad with crispy bacon and fresh chives. The spiced up seasoning is what makes this simple dish perfect for evening meals outside on the terrace!
Ingredients list Bacon Potato Salad:
- 1 1/2 lb (700g) of potatoes
- 4 slices of bacon, cut into strips
- 1 leek
- Wine vinegar
- 2 tablespoons oil
- Salt and pepper

Gently clean the potatoes before cooking them for about 10 minutes in boiling salted water.
Plunge potatoes into iced water to stop cooking, drain and set aside in a bowl.
In a nonstick skillet, cook bacon over medium heat for 5 minutes.
Add the leek and cook until bacon is crisp and leeks are tender.
Cut potatoes into cubes, keep their skin.
Add leeks and bacon on it.
In a small bowl, whisk mustard and vinegar.
Add olive oil and season to taste with salt and pepper.
Pour the salad dressing into the bowl.
Stir and garnish with chives.
