Ingredients list: Stir Fried Monkfish Curry
Serves 4:
- 1 1/3 lb (600g) monkfish tail
- 2 cups (50cl) coconut milk
- 2 onions
- 1 Tablespoon red curry paste
- 1 Bunch cilantro or Thai basil
- 2 tbsp oil
Directions
Fry the chopped onions in hot oil, then book.
Cut the monkfish tail into medium-sized pieces, and put them in the hot pan with the curry paste. Coat all pieces and pour the coconut milk. Add salt and onions, and simmer for 30 minutes.
