Here’s a light, delicious and easy salad to do. You can categorize this in the “quick lunch ready in less than 10 minutes” family so that you won’t be diving into chocolate, cookies, bread and cheese, sausage… well, in short: to nibble!

Ingredients list: Grated Carrot Salad
- 2 carrots
- Juice of 1/2 orange
- 1 tbsp white balsamic vinegar
- Salt and pepper
- 10-15 blanched pistachios
Toast pistachios in a hot pan.
Meanwhile, peel the carrots and grate them in a food processor — or by hand —. Transfer to a dish.
Squeeze the juice of 1/2 orange. Add the white balsamic vinegar, salt and pepper. Pour over carrots and toss to season them. Do not “drown” the carrots into the revisited dressing, it is necessary that carrots are well flavored but they should keep their crunch.
Crush the pistachios roughly and spread them on carrots just before serving. Add pistachios at the last minute to keep them crisp and flavored. The carrot and pistachio mixture gives a very colorful result on the plate. This carrot salad is very fresh and crisp.
