Sometimes we feel like an incredibly refreshing and crisp entry, because it’s hot or the day before was too much eating. Quick to prepare, this salad is full of flavors: the  orange/fennel association is a real treat! It should appeal to fans of fennel…

Ingredients: Orange Fennel Salad

  • 3 fennel bulbs (raw)
  • 3 oranges
  • 2 onions
  • 2 tablespoons of greek black olives (pitted)
  • juice of 1 / 2 lemon
  • salt, pepper, olive oil

Preparation steps: Orange Fennel Salad

 1. Slice the onions, cut the fennel bulbs in 4 and grate them like grated carrots (watch your fingers!). Add the black olives, coarsely chopped with a knife and sprinkle with lemon juice.
2.Add salt and pepper and mix…Add the orange supremes: these are quarters of the orange pulp, completely stripped from skin and fine white membranes. Cut the two ends of the orange so that it is very stable and then cut the skin, turn orange on each cut. The preparation is simple, you just need a knife that cuts very well!
3. Once oranges are added, pour 2 tablespoons of olive oil and mix well.
4. Chill at least 1/2 hour before serving.
