These roast chicken wraps come together really quickly, and it’s great because you don’t have to cook or warm the chicken. Just fill tortillas with summer vegetables and a delicious yogurt sauce then roll up these tasty wraps as needed for quick lunches at home or to bring at work throughout the week.
Ingredients for Roast Chicken Wrap with Cilantro Yogurt Sauce
Makes 4:
- 4 flour tortillas
- 2 flesh tomatoes
- 2 avocados
- 1/2 pound (200g) leftover roast chicken
- Salt and pepper
- 1 teaspoon of cumin
- 1 small bunch of chopped fresh cilantro
- Half a lime
- 1 teaspoon of olive oil
- 2 handfuls of mixed salad (lettuce, arugula, spinach, lamb lettuce etc…)
- 2 yoghurts
Directions
1. Wash tomatoes, peel them (use the blanching technique it’s way easier) and cut them into small cubes. Peel and dice avocado and add a drizzle of lime juice to prevent blackening. 2. Prepare the yogurt sauce: Mix yogurt with a teaspoon of cumin, olive oil, a little salt, lime juice and some chopped cilantro. 3. Brush each wrap with the yoghurt sauce. 4. Place the tomatoes, avocado, salad, and chicken onto the center of each wrap. Add salt and pepper and spread a little yogurt sauce before sprinkling with remaining chopped fresh coriander. 5.
