Ingredients list for the double chocolate mousse
The white chocolate mousse:
- 3 eggs: 3 whites + 2 yolks
- 4 1/2 oz (125g) white chocolate
- 1 2/3 tablespoons (25g) butter
- 1 2/3 tablespoons (20g) sugar
- A pinch of salt
- Lemon juice
The dark chocolate mousse:
- 3 eggs: 3 whites + 2 yolks, separated
- 4 1/2 oz (125g) dark chocolate
- 1 2/3 tablespoons (25g) butter
- 1 2/3 tablespoons (20g) sugar
- A pinch of salt
- Lemon juice
The caramelized pears
- 1 pear, peeled, quartered and sliced
- Sugar
- A knob of butter

Directions
1. Place white and dark chocolates in two separate small bowls. Add butter and heat in the microwave for 1 minute. Stir with a spoon until melted and smooth. Re-heat a few seconds if necessary. Set aside and allow to cool.
2. Meanwhile, in two large mixing bowls. Mount the two batches of egg whites with a pinch of salt and a drizzle of lemon juice. When eggs are almost stiff, add sugar and continue beating. The egg whites should form peaks when you lift the mixer.
3. Add 2 egg yolk to each bowl of melted chocolate and mix well until smooth. Transfer into 2 larger mixing bowls.
4. Gently fold the egg whites in three steps into each bowl of chocolate. Refrigerate for 20 minutes.
5. Meanwhile, brown the pear slices in butter and sprinkle with a pinch of sugar to caramelize. Set aside.
6. Fill the glasses to mid-height with white chocolate mousse. Then fill with dark chocolate mousse to the top. You can use a pastry bag for a cleaner result. Top pear slices and refrigerate until serving.
Note: Feel free to add fresh grated ginger and lime zest to the chocolate to add a bit of zing.
