Ingredients list for the Baked BBQ Pork Chops

  • 3 bone-in pork chops
  • ½ cup BBQ sauce of your choice
  • 1 zucchini, sliced
  • 1/2 yellow bell pepper, sliced
  • 1/2 orange bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 1 lime, sliced
  • Fresh chopped parsley

Directions

1. To make the baked bbq pork chops: Preheat your oven to 425°F (220°C). Arrange pork chops on a baking sheet lined with foil.

2. Brush pork chops with BBQ sauce and bake for 15 minutes.

3. Remove from oven and arrange sliced vegetable (zucchini, bell pepper, lime) around. Baste veggies with BBQ sauce and return the baking sheet to the oven in grill or broil mode for 5 minutes. Serve the BBQ pork chops, zucchini and peppers topped with fresh parsley. Enjoy!

Tips on how to bake pork chops in the oven

  • Buy bone-in pork chops when you can: The bone has some fat around that brings up more flavor, keeps the meat tender and juicy, plus it helps prevent the pork chops from overcooking.
  • Take the pork chops out of your refrigerator about 15 minutes before you plan to start cooking. The meat will cook more evenly throughout when you bring it at room temperature first.
  • Rest the meat after baking pork chops: A quick rest period of five minutes allows the juices to flow back through the meat and make it more tender. You can loosely tent the sheet pan with foil for 5 minutes before serving the baked pork chops, zucchini and peppers.
