Directions

1. Preheat your oven to 450°F (230°C) and line a baking sheet with foil. Make the spicy ketchup dip by combining all the dip ingredients and refrigerate until zucchini are done.

2. Place zucchini slices to drain on paper towels for a couple of minutes. Mix crumbs and flour together along with paprika, parsley, Italian seasoning, parmesan, garlic, and salt.

3. Whisk eggs and egg whites in a bowl and season. Dip zucchini in egg mixture and then into the bread crumb mix, pressing down on the crumbs. Then repeat the same process again to get that extra thick crust: dip once more in the egg mixture, then in the crumbs.

4. Place zucchini on the baking sheet and spray the tops with oil.  Bake 8-10 minutes, turn and spray if needed and baked an additional five minutes. Remove zucchini slices from the baking sheet and serve hot with the spicy dip. Enjoy!
