- 1 spaghetti squash
- 4 tablespoons unsalted butter
- 1/2 tablespoon garlic powder
- 1 cup Parmesan cheese, finely grated
- Salt and pepper to taste

Directions
1. To make the parmesan butter spaghetti squash mash: Place whole spaghetti squash in the microwave and cook on high for 5 minutes. This makes the squash super easy to cut through.
2. Prepare your Instant Pot (A pot on the stove works as well but takes longer) by adding 2 cups of water to it, along with the steaming rack. Carefully remove the spaghetti squash from the microwave and use a long serrated knife to cut the squash in half and place on the steaming rack with the flesh side up. Do not remove the seeds before cooking, removing it afterward is best to get the most flesh from the squash.
3. Place the lid on the Instant Pot and cook on high pressure for 15 minutes. Do a quick release, remove the spaghetti squash halves and carefully remove the seeds and innards using a spoon.
4. Scoop the flesh of the spaghetti squash into the bowl of a food processor fitted with the blade attachment. Add the remaining ingredients (butter, garlic powder, parmesan, salt, and pepper) and pulse until the spaghetti squash puree reaches your desired consistency. Serve the Parmesan Mashed Spaghetti Squash with more butter on top and freshly chopped parsley. Enjoy!
Note:

- Add a drizzle of browned butter (or ghee) on top of the spaghetti squash mash for even more flavor.
- For larger spaghetti squash, make sure to use a large 8qt Instant Pot to fit both halves.

First, this is the way I’m cooking spaghetti squash from now on - the microwave and instant pot method is so much easier! Second, this is a delicious way to prepare squash! I cooked it exactly as the recipe directs except I reduced the amount of garlic powder by about half. This was absolutely delicious served alongside beef bourguignon. I may try using the immersion blender to mash the cooked squash the next time I make it.
