Ingredients list for the chicken pesto pasta
Serves 2-3
- 1 1/2 pounds (750g) chicken thighs, skinless
- 1/2 pound (220g) cherry or grape tomatoes, halved
- 2 tablespoons olive oil
- Salt and freshly ground pepper
- 1 cup basil pesto
- 1/2 lb spaghetti pasta
- Parmesan cheese, for garnish

Directions
1. Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium heat. Add chicken to the skillet and cook for 5-7 minutes on each side, until browned.
2. Add halved tomatoes and basil pesto to the chicken and give a quick stir. Continue cooking until cooked through.
3. In the meantime, cook pasta according to package directions.
4. Drain pasta and add to the skillet with chicken and pesto and cook for 2 to 3 minutes, until heated through. You can also serve the chicken and pesto directly over cooked pasta, without combining in the skillet. Garnish with parmesan, more pepper and serve immediately. Enjoy!
