- 1 1/2 cups jasmine rice (or basmati), rinsed and drained well
- 2 tablespoons olive oil
- 1/4 cup finely chopped yellow onion
- 2 tablespoons minced garlic
- 1 1/2 cups of low-sodium vegetable broth
- 2 cups fresh spinach, chopped
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon minced fresh parsley

Directions
1. To make the spinach rice in the Instant Pot: Heat olive oil in the insert of the Instant Pot on sauté mode.
2. Add yellow onion and saute until starting to deepen in color, about 3 minutes. Add garlic and saute until just starting to deepen in color, about 1 minute.
3. Add the rice, give a good stir, and sauté for 3 minutes more.
4. Pour in chicken broth and season with pepper. Close the lid and set it to “rice” mode for 10 minutes.
5. Once done, do a quick release and let the rice rest for 5 minutes. Add fresh spinach and a tablespoon of butter. Toss and fluff the rice with a fork, combining rice and spinach.
6. Serve the Instant Pot garlic spinach rice warm, garnished with parsley and more butter if you like. Enjoy!
