Directions

1. To make the chicken pasta soup: Cook pasta until al dente, according to package directions

2. Meanwhile, heat the olive oil in a large pot or cast iron over medium heat. Add the onion, garlic, carrot, tomato, and celery; cook until tender, about 5 minutes. Add tomato paste, Italian seasoning, and chicken stock to the vegetables, cover, and bring to a simmer. Add the chicken breast, and cook for 15 – 20 minutes, until cooked.

3. Remove chicken breasts to a plate and shred with two forks; then return to the soup, reheat quickly and adjust seasoning with salt and pepper.

4. Add the pasta to the soup just before serving. Ladle the chicken pasta soup into bowls and serve. You can make the soup in advance or freeze it, just omit the pasta and add when serving. Garlich with basil leaves and sprinkle with grated Parmesan if you like, enjoy!

Tips for the chicken pasta soup recipe

This chicken pasta soup recipe is exactly what you need on a cool day to warm you from the inside out. The flavor actually seems to get better and better as the ingredients meld and marry together. This chicken pasta soup makes a great lunch at home, at work or at school on a chilly day! Here are a few tips to make it the best soup ever:

  • We used elbow pasta for this chicken pasta soup. They make the soup feel really hearty, but feel free to use other varieties such as rotini or penne. They will soak up more of the delicious broth!
  • Make sure you don’t overcook the pasta, otherwise they will get mushy very quickly especially if you plan to reheat the soup later on.
  • You can use turkey instead of chicken, the soup will be delicious too.

Can I use chicken leftovers to make this chicken pasta soup?

Yes, you can use cooked chicken or chicken leftovers for this recipe, simply reduce cooking time by 10 – 15 minutes.

How and how long to store the chicken pasta soup

Nothing beats a big pot of chicken soup and enjoying it throughout the week. As we already said, if the soup is stored too long, the pasta will turn mushy. Keep the soup for up to 2 days in the refrigerator. If you plan to keep it longer, store the soup and pasta separately and add pasta back when reheating the chicken soup. To reheat the chicken pasta soup, recombine the pasta and soup in a pot or a large microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. You may need to add a little chicken broth after the soup is stored in the refrigerator for a day or two. If you use uncooked noodles, reheat the soup on the stove until the mixture boils and noodles are tender.
