Directions

1.  To make the spinach chicken casserole recipe: Preheat your oven to 400°F (200°C). In a small bowl, combine Italian seasoning, paprika, garlic powder, onion powder, salt, and pepper.

2. Rub the chicken breasts with the sun-dried tomato oil, then season with the spice mixture on all sides. Arrange chicken breasts in a shallow baking dish.

3. In a saute pan or skillet, wilt spinach with a small knob of butter and crushed chili pepper flakes. Drain well and set aside.

4. Spread cream cheese on top of the chicken, then top with chopped sun-dried tomato. Add wilted spinach on top, then sprinkle with shredded Mozzarella.

5. Bake in the oven for 20 – 30 minutes, until chicken is cooked through (internal temperature should reach 165°F – 74°C). Cooking time will vary depending on the thickness of your chicken breasts. Garnish with fresh chopped parsley and serve the spinach chicken casserole immediately. Enjoy!

Notes:

  • The dish should be salty enough with cream cheese and Mozzarella, but you can add a pinch in the spice mix if you want.
  • If you follow a regular, non-keto/low-carb diet, you can serve this chicken casserole over rice, quinoa, or pasta.

Tips for the chicken casserole recipe

  • Go easy on the salt since cream cheese and mozzarella are already salty, this would overwhelm the taste of your chicken casserole.
  • You can also serve the baked spinach chicken casserole with zucchini noodles, or rice or even pasta if you’re not on a low-carb/keto diet.
  • If you want a crisp, crunchy topping, sprinkle your chicken casserole with breadcrumbs. Panko is wonderfully flaky and delicate while crushed pork rind might be a good option for those following a low carb or keto diet.
  • The spinach chicken casserole is easy to reheat the day after. Simply cover the casserole dish with foil and put in the oven at 370ºF (190ºC) for 10 – 15 minutes until heated through.
  • You can also freeze individual portions of the chicken casserole in freezer containers so you have a comforting dinner for evenings when you don’t feel like cooking from scratch. Partially thaw in your refrigerator overnight then bake the individual casserole portions to reheat completely.
