Corn tortillas, seasoning… You can customize the chicken enchiladas recipe to your liking because it is super versatile. This will be a dinner that your kids and family would run to the dinner table for. How to make white chicken enchiladas Casserole

There is an infinity of ways you can make enchiladas. But these white chicken enchiladas are irresistible and are our favorite version. 

We use cooked chicken, mozzarella cheese and cream cheese, and homemade taco seasoning to make the filling. Rotisserie chicken is perfect for this enchiladas recipe and we use chicken breast or thigh meat for this recipe.

Assemble the enchiladas by filling each flour tortilla with about 1/4 cup of the chicken mixture then roll it up and place it in a casserole dish.

Add the broccoli florets, and pour the mixture of cream and cheese on top.

Bake the enchiladas casserole for 22 to 25 minutes or until the top starts to brown and the sauce is bubbly. Easy!

Directions

1. To make the chicken enchiladas: Preheat your oven to 350ºF (180ºC) and prepare a 9×13-inch baking dish. Blanch the broccoli florets for 2 or 3 minutes so they are crisp-tender. Transfer broccoli to an ice bath to stop cooking, drain, and pat dry.

2. In a large bowl, mix the chicken with the cream cheese, garlic powder, taco seasoning, and 1 cup of shredded cheese.

3. Evenly stuff the chicken and cream cheese mixture into your flour tortillas, and place them into your prepared pan.

4. In a bowl, combine heavy whipping cream with remaining shredded cheese. 

5. arrange the broccoli florets on top of the stuffed tortillas in the baking pan, pour the cream sauce over the enchiladas, and top with the remaining cheese.

6. Bake the chicken enchiladas in the oven for 22-25 minutes and then switch the broiler on for a few minutes to crisp up the top and brown the cheese. Sprinkle the creamy chicken enchiladas with fresh chopped herbs and chili pepper flakes if you like. Enjoy! ❤️

Tips for the white chicken enchilada recipe

  • You might want to warm your tortillas for 1 minute in the microwave so they become easier to roll.
  • If you prefer, you can use corn tortillas to make a gluten-free version of these white chicken enchiladas. The corn tortillas need to be warmed up before rolling.
  • Feel free to use any shredded cheese that you’d like such as Monterrey Jack, cheddar, or a Mexican blend!

How to make the chicken enchiladas in advance

The chicken enchiladas can be prepared several days in advance. Store the stuffed and rolled enchiladas in a covered baking dish. Keep the cream sauce separate until you plan to cook the enchiladas.

You can keep the creamy chicken enchiladas leftovers for up to 3 days in an airtight container in your refrigerator. Reheat in the oven at 350ºF (180ºC) until heated through. To freeze chicken enchiladas, let them refrigerate completely in the fridge. Then transfer the enchiladas to a freezer-safe container or freezer bag and freeze.

    I made this with corn tortillas. Added a little pepper and onion powder and garlic powder to the heavy cream cheese sauce. and it was amazingly delicious. Great Recipe!

    I followed the directions perfectly but looking at the pictures there is something missing in the recipe bc mine does not look exactly like what I see in the pictures.
