Imagine this wonderful baked vegetables recipe with a delicious goat cheese gratin. What can I say? Flavors in this dish will make your taste buds sing! You will cook vegetables until you get their tender heart. You can taste this recipe as a nice accompaniment to grilled meat or fish.

Preparation time: 25 minutes – Cooking time: 1 hour

Ingredient list for the baked vegetables Casserole

Serve 6 :

  • 4 zucchini
  • 4 tomatoes
  • 4 onions
  • 1 orange pepper + yellow + orange
  • 5 1/3 ounces (150g) fresh goat cheese
  • Pitted black olives
  • Olive oil
  • Salt + pepper

For the sauce

  • 3 cloves of garlic
  • 1 bunch fried basil
  • 3/4 cup (20cl) of olive oil
  • Salt + pepper

Cooking instructions

1. Peel the onions and rinse tomatoes and peppers.

2. Remove the seeds from peppers.

3.  Cut all the vegetables.

4. Prepare the pesto by mixing the garlic, basil and olive oil. Add salt and pepper.

5. In a large bowl, place onions, tomatoes, zucchini and peppers cut into pieces, pour over the pesto and mix well.

6. Preheat the oven to 320°f (160°c).

7. Oil the baking dish, then arrange the vegetables by incorporating goat cheese leftover.

8.  Divide the olives on top. Add salt and pepper and drizzle with olive oil.

9. Bake for 1 hour.

Serve hot or warm.
