Directions

1. To make the oatmeal cookies: Line a cookie sheet with parchment paper. Add rolled oats to your food processor and pulse until oats get like coarse flour. 

2. Add peanut butter, maple syrup, and 1/2 cup of oats in a large mixing bowl. Mix with a spatula until the maple syrup is fully incorporated, the oats are fully coated, and the mixture turns into a thick dough. If your oatmeal cookie dough doesn’t seem thick enough, add one tablespoon of oats and mix again until you get the desired consistency.

3. Scoop the cookie dough with a cookie scoop. Roll scooped dough between your hands until it forms a smooth ball. Place the dough ball onto the cookie sheet. Press down on the dough ball with the palm of your hand or the bottom of a measuring cup to form a disc about 1/3 inch thick. Repeat with the remaining dough.

4. Refrigerate the 3-ingredients oatmeal cookies for 30 minutes so they can firm up. Enjoy! ❤️

    I made these, but they don't look like the photo. Mine are dry and powdery. Are you supposed to put the 1/2 cup of oats in the food processor and then add that to the peanut butter and maple syrup?
