Here is a very sunny salad: orange, pomegranate, fennel, and a few salad leaves… which is perfectly accompanied by a drizzle of smoked fish.
Ingredients lists: vitamin salad with orange and pomegranate
For 2 people:
- 1 fennel bulb
- 1 orange
- 1 / 2 pomegranate
- few seedlings of lettuce
- fresh herbs (parsley, chives, fennel sprigs)
- olive oil and balsamic vinegar
- salt and pepper

Preparation: vitamin salad with orange
Slice the fennel very finely with a knife or a mandolin. Peel the raw orange and cut it into slices.
In the bottom of your plate, spread a bed of salad. Place the sliced fennel and orange slices on top. Sprinkle with pomegranate seeds and chopped fresh herbs. Season with salt and pepper. Pour somd dressing over (olive oil and balsamic vinegar).
Enjoy without a second thought, you will have plenty of vitamins and flavors. And remember: eat at least 5 fruits and vegetables a day!
