Preparation time: 20 minutes.

Ingredients list for the anchoïade recipe

(serves 4) 

  • 200 grams of salted anchovies
  • 2 cloves garlic
  • 1 teaspoon vinegar
  • 15 cl of olive oil
  • Black pepper from the mill

Preparation of the anchoïade

Clean the anchovies and open them lengthwise.
Remove the center column and the tail, rinse.
Pound anchovy fillets, garlic, pepper and vinegar in a mortar.
Pour the oil on the mixture and serve on slices of toasted bread.
Store the anchoïade in a jar, in a cool place, covered with a little olive oil.
