How to Make the Sweet Potato Casserole Recipe

First, cook sweet potatoes in the Instant Pot. In the meantime, make the brown butter (you can skip this step if you don’t want that nutty flavor). Mash the sweet potatoes and drizzle in the brown butter and kosher salt. Using a mixer, beat the sweet potatoes for about 2-3 minutes until fluffy and smooth. Finally, pour the mashed sweet potatoes into a casserole dish. Top with pecan, dried cranberries, and maple syrup, and broil for 2 or 3 minutes to crisp up the topping.

Directions

1. To make the sweet potato casserole: Add cut sweet potatoes, garlic, and water into the Instant Pot.

2. Place the lid on, turn, and lock. Press the “Manual” button on the Instant Pot on high pressure, and then set the timer to 10 minutes.

3. In the meantime, prepare the browned butter: Place butter in a light-colored medium skillet or saucepan (so you can better judge the color butter is taking). Heat over medium heat, and allow to cook, stirring occasionally until the butter has browned. Brown bits should just start to bubble up into foam and you’ll smell a nutty aroma. Filter the butter into a bowl using. fine mesh strainer so it doesn’t continue to cook and burn.

4. Once cook time is complete for the sweet potatoes in the Instant Pot, carefully quick-release the pressure from the pot. Drain the water from the instant pot insert. Mash the sweet potatoes and garlic with a potato masher, the texture should be chunky. Add browned butter and maple syrup and blend using an electric hand mixer blend on low speed until fully combined. Adjust seasoning with salt and pepper to taste. Increase the mixer speed and whip until you get a smooth and creamy sweet potato puree.

5. Butter a rimmed baking pan and spread the mashed sweet potatoes into the pan. Cover with pecan, dried cranberries, and drizzle with maple syrup. Broil in the oven for 2 or 3 minutes, until pecans are toasted. Remove the sweet potato casserole from the oven, rest for 5 minutes before serving. Enjoy!
