Directions
1. To make the roasted sweet potatoes: Preheat your oven to 425ºF (220ºC) and prepare a rimmed baking sheet.
2. Peel and slice the sweet potatoes into 1-inch thick slices, and arrange them on the roasting pan.
3. Melt the butter, and drizzle it on top of the sweet potatoes. Sprinkle on the salt, pepper, and cinnamon. Toss the sweet potato rounds to coat, and then redistribute them on the pan in a single layer, not touching. Transfer to the oven and roast for 20 minutes.
4. Flip the sweet potato rounds using tongs, then roast for another 20 minutes. The potatoes are done when they’re crisp and golden brown, and the insides are light and fluffy.
5. In the meantime, make the maple pecan sauce: bring the maple syrup to a boil in a small saucepan or skillet. Add the pecans and thyme. Wait for the sauce to come back to a simmer, cook for 1 minute, and then remove from heat.
6. When the roasted sweet potatoes are ready, transfer them to a serving platter. Pour the maple pecan sauce over the sweet potatoes and serve. Garnish with more thyme and serve. Enjoy! ❤️

Tips for the roasted sweet potatoes recipe
Deliciously seasoned and caramelized to perfection, these baked sweet potatoes are a gorgeous side that goes with so many festive meals.
- You will love these roasted sweet potatoes with roast chicken, roast pork, or prime rib.
- If you have leftovers of the maple pecan sauce, drizzle it on anything your like – like, oatmeal, vanilla Ice cream, French toasts, etc.
- Swap fresh rosemary instead of thyme if you prefer. We find fresh thyme more subtle on these baked sweet potatoes, but rosemary will work great.
- Make sure to cut the sweet potatoes in approximately the same size so they bake evenly.
What type of sweet potatoes should we use?
Our favorite sweet potatoes for roasting are either the Red Garnet or Jewel varieties. When picking your sweet potatoes at the grocery store look for firm potatoes without growths or discolorations on their skins. Avoid soft or wet sweet potatoes.
How long to roast the sweet potatoes?
We cut the sweet potatoes in thick rounds for the presentation. But if you’re making roasted sweet potato cubes instead of slices, your roasting time is cut in half—about 20-25 minutes. The smaller you go, the less time it takes! Think about giving a nudge to the baking pan from time to time so the sweet potato cubes roast evenly.
Do we have to peel the sweet potato first?
Sweet potato skins are edible and become crispy in the oven while roasting, just like regular potatoes. We chose to peel them in this recipe for the presentation, but it’s totally up to you if you’d like to keep the skin on.
How and how long to keep the roasted sweet potatoes leftovers?
These roasted sweet potatoes will keep in an airtight container for up to 3 days in the refrigerator. Reheat gently in the microwave with a few drops of water to loosen the sauce. Or, as we like to do, reheat the sweet potato rounds on the stovetop in a cast-iron skillet until hot. The maple pecan sauce can keep in the refrigerator for 3 days.
How to make these roasted potatoes less sugary?
Of course, you can omit the whole glaze thing over your roasted sweet potatoes. Alternatively, you can use a savory mix of spices such as Cajun, or a blend of chili and cumin to keep things simple yet delicious.
