How to make shrimp ceviche

Directions
1. To make the shrimp ceviche: Bring a pot of water to a boil. Meanwhile, fill up a medium bowl with ice water, and set it aside.
2. Add the shrimp to boiling water and cook quickly until pink and opaque, about 1 minute.
3. Drain shrimp in a colander then transfer to the prepared ice water bowl to stop the cooking and cool for a few minutes. Drain well then chop the shrimp into small pieces with a sharp knife.
4. In a medium glass bowl, combine shrimp, lime juice, lemon juice, tomatoes, onion, cilantro, jalapeno pepper, and season with salt and pepper.
5. Transfer the ceviche to the refrigerator and let rest 30 minutes to 1 hour so the flavors meld together.
