It’s very quick to make and full of bold flavors. We use cooked shrimp to make sure everyone can enjoy this delicious appetizer, but you can always make it with raw chopped shrimp that marinate for 20 minutes so the shrimp cooks with the acidity of lemon and lime juice. You can serve this easy shrimp ceviche as an appetizer or a light meal if you prefer, it’s perfect for any occasion!

How to make shrimp ceviche

Making shrimp ceviche is very easy: First, cook shrimp in boiling water for one minute then soak in ice water. Then combine shrimp with chopped veggies (except avocado and cucumber because they will darken, and render water, respectively), herbs, salt, pepper, mayo, lemon juice, and lime juice. Add avocado and cucumber at the last minute when ready to serve.

Directions

1. To make the shrimp ceviche: Bring a pot of water to a boil. Meanwhile, fill up a medium bowl with ice water, and set it aside.

2. Add the shrimp to boiling water and cook quickly until pink and opaque, about 1 minute.

3. Drain shrimp in a colander then transfer to the prepared ice water bowl to stop the cooking and cool for a few minutes. Drain well then chop the shrimp into small pieces with a sharp knife.

4. In a medium glass bowl, combine shrimp, lime juice, lemon juice, tomatoes, onion, cilantro, jalapeno pepper, and season with salt and pepper.

5. Transfer the ceviche to the refrigerator and let rest 30 minutes to 1 hour so the flavors meld together.

6. Toss cucumber and avocado in the shrimp ceviche at the last minute and serve. This shrimp ceviche is delicious with tortilla chips. Enjoy! ❤️
