How to make the pineapple bars

Making pineapple bars is super easy: beat together butter, sour cream, sugar, and eggs then beat in flour, baking soda, and salt until smooth. Add the crushed pineapple then spread the batter into a baking pan. Bake the pineapple bars at 350ºF (180ºC) for 25-30 minutes until done. When the pineapple bars are baking, make the coconut icing with confectioner sugar, half-and-half, and coconut extract. Directions

1. To make the pineapple bars: Preheat your oven to 350ºF (180ºC). In a large bowl, mix together butter, sour cream, sugar, and eggs.

2. Beat in flour, baking powder, and salt until smooth.

3. Stir crushed pineapple in the mixture. Then spread into a lightly buttered 9×9 pan.

4. Bake the pineapple cake bars at 350ºF (180ºC) for 25-30 minutes until done. The filling should be soft and gooey but not runny. An inserted toothpick should come out with some moist crumbs, but not a sticky texture.

5. In the meantime, make the coconut icing: Use a small bowl and combine the confectioners’ sugar, half-and-half, and coconut extract until smooth. The coconut icing should be thick enough to drizzle, but should not be runny either. Add more half-and-half if the coconut icing is too thick.

6. Allow the pineapple bars to cool in the pan for 10 minutes before dusting with powdered sugar, sprinkling with coconut icing, and cutting into squares. Enjoy! ❤️

Tips for the pineapple bars recipe

    I printed your earlier version which did not mention sour cream in the directions. I had to take it out of the oven after it had been cooking 7 minutes and stir in the sour cream. It's in the oven now. Hope it turns out ok. Also, the original recipe states the sugar is divided and it didn't mention it in the instructions. Hmm. I came up to print it again to find that all had been corrected. Hope it turns out ok because I think it has alot of potential.
