Instant Pot Hawaiian chicken recipe
This Hawaiian chicken in Instant Pot is tender and juicy and you can make it in less than 30 minutes from scratch. We used white rice for the pictures, but you could serve it with brown rice, rice noodles, pasta, couscous, cauliflower rice, or steamed veggies. This Instant Pot chicken recipe makes enough to feed 4 people, and is the perfect combination of sweet and sour chicken. Chicken only takes 8 minutes to cook on high pressure, so it takes about 15 minutes in total – including the time necessary to reach pressure. If you like a kick of spice to your Hawaiian chicken, add more Sriracha or a pinch of red pepper flakes. So much flavor!

How to make Hawaiian chicken in the Instant pot
The method to make Hawaiian chicken in the pressure cooker is very simple. Combine all the ingredients for the marinade, and marinate chicken bites for 10 minutes or more. Add chicken and marinade to the Instant Pot and cook on pressure cook mode for 8 minutes. Done!

Directions
1. To make the Instant Pot Hawaiian chicken: In a bowl, add pineapple juice, soy sauce, vinegar, grated ginger, grated garlic, mustard, ketchup, sugar, sesame oil, sriracha, salt, and black pepper. Whisk well until sugar is dissolved.
2. Arrange diced chicken breasts on a large shallow plate or bowl and drizzle half the marinade over. Let marinate for 10 to 15 minutes on the counter.
3. Place chicken and marinade in the Instant Pot and throw in pineapple chunks. Place the lid on the Instant Pot, and turn the vent to seal. Press “pressure cook” and set the timer to 8 minutes. Once cooking time is over, do a quick release.
4. Serve the Instant Pot Hawaiian chicken straight from the instant pot on top of white rice, brown rice, rice noodles, pasta, couscous, or cauliflower rice. Drizzle the sauce over the chicken and garnish it with parsley. Enjoy!

Tips for the Instant Pot Hawaiian chicken recipe
- Use boneless skinless chicken breasts for the leanest cut, but this chicken recipe works well with boneless, skinless chicken thighs too.
- If the sauce is too runny after cooking the chicken in the Instant Pot, remove the chicken with a slotted spoon and set the Instant Pot in sauté mode. Reheat the sauce until thickened to your liking.
- Throw your leftover Hawaiian chicken in your salads, or meal prep!

You can keep Hawaiian chicken leftovers for up to 3 days in an airtight container in your refrigerator. Reheat in a saucepan or microwave with a few drops of water to loosen the sauce.
