Ingredients
- 1 1/2 lb (700g) fresh diced potatoes
- 1 lb (450g) kielbasa sausage, cut into small pieces
- 1 small onion, diced
- 2 or 3 garlic cloves, minced, optional
- 2 1/2 cups shredded cheddar cheese
- 1 1/2 to 2 cups (500ml) chicken or vegetable stock
- 1/2 cup (125ml) milk
- 1/4 cup (60ml) heavy whipping cream
- 1/2 tablespoon unsalted butter, diced
- 1 teaspoon Italian seasoning, optional
- 1/2 teaspoon Cayenne pepper, optional
- Salt and pepper, to taste
Instructions
- Combine diced potatoes, chopped kielbasa, onion, and butter in a 6-quart slow cooker. Make sure to use a large Instant Pot, if too small, you might end up with the dreaded "burn" notice.
- In a separate bowl, combine chicken stock, milk, heavy whipping cream, garlic, Italian seasoning, Cayenne, salt, and pepper. Pour the mixture over the potatoes and sausage. Mix everything together, then sprinkle the 2 1/2 cups of cheese over the other ingredients.
- Cook on stew for 8-10 minutes. It is done when your potatoes and onions have cooked through. Be careful not to overcook the potatoes. If you like, you can transfer the sausage and potatoes to a baking dish and broil in the oven for 2 minutes to crisp up the top. Serve the Instant Pot Sausage and Potato Casserole immediately. Easy, quick, delicious! Definitely more soup/stew than casserole. Save some cheese to put on top as you serve it. We also added peas once it was done and pressure released. Delicious thank you

Love this but changed it up a bit for my taste, I seasoned with my heart (more Italian seasoning, added in some Cajun seasoning). Based on the other comment I left the cheese out, and after I released the pressure I used the sautee function for a bit & added some cornstarch slurry to thicken a bit more. After that I stirred in the cheese and it was so good!

This was flavorful. However, I was surprised it was so soupy. And I may have misunderstood but I put the cheese on the top before cooking - it pretty much disintegrated. Next time I would add the cheese after it’s finished cooking - release, turn off the IP, add the cheese then replace the lid until the cheese melts.
