- 1 cup low sodium chicken broth
- 1 tablespoon balsamic vinegar
- 1 lb pork tenderloin
- 1 stick unsalted butter, softened at room temperature
- 1 small red onion, roughly chopped
- 1 cup dried cranberries
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh chopped parsley, for garnish

Directions
1. To make the Instant Pot pork tenderloin with cranberry butter sauce: Place the trivet in the Instant Pot and add chicken broth and balsamic vinegar.
2. Using a sharp knife, trim the silver skin from the side of the tenderloin. Cut in half and rub with salt and pepper
3. In a food processor, combine the softened butter (make sure the butter is ultra-soft, so the mixture adheres to the meat), dried cranberries, red onion, garlic powder, salt, and black pepper. Pulse until you obtain a sticky paste. Coat the pork tenderloin with the cranberry butter mixture, then arrange on the trivet, into the Instant Pot.
4. Place the lid on the Instant Pot and turn the valve to seal. Select Manual, high pressure, and set the timer to 12 minutes. If you like your tenderloin more on the rare side, 10 minutes is sufficient for fresh pork.
5. When the cooking time is over, turn the Instant Pot off and do a quick release. Open the lid, remove the pork tenderloin and slice on a cutting board, using a sharp knife. Return the pork tenderloin slices into the Instant Pot to reheat until ready to serve. The pork slices will absorb some of the delicious cooking juices. Garnish with fresh chopped parsley, and serve the Instant Pot pork tenderloin with cranberry butter sauce. Enjoy!
Note: You can use frozen tenderloin if you like, set the Instant Pot timer to 15 – 20 minutes.

I am a sucker for anything with cranberry and onion. I just love the sweet and savory flavor. This was no exception. I didn’t make any intentional changes but I did run into a few small changes that all worked out in the end. I made the cranberry butter earlier in the day and coated the pork and refrigerated it until I was ready to cook. I accidentally forgot to rub the pork with salt and pepper, but it was still very flavorful. So my tenderloin was a bit bigger then the recipe called for and it was a center cut. When the 12 min cooking time was over, the center of my pork was not done. I placed the sliced pieces into the Instant Pot on sauté, slightly covered with the lid and it cooked the rest of the pork off perfectly. This sauté helped thicken the sauce for serving. It was good I will definitely make again.
