Healthy Lettuce Wraps made with shrimp, freshly chopped vegetables and a delicious peanut butter sauce - Overflowing with flavors and textures!
Ingredients you need for the Shrimp Lettuce Wraps
Directions
1. To make the shrimp lettuce wraps: in a bowl, combine all ingredients (peanut butter, rice vinegar, coconut milk, soy sauce, honey, ginger, and garlic) until smooth, and set aside. You can use your blender for a creamier texture.
2. Heat olive oil in a skillet over medium-high heat. Add raw shrimp and cook until golden, about 2 – 3 minutes.
3. Stir in crushed chili pepper, cumin, ginger, onion and cook for 1 minute. Add zucchini and soy sauce and cook for 1 minute, then add carrot, jalapeño, garlic, bell pepper, and chives. Cook for 1 – 2 minutes more, vegetables should be still crunchy. Season with salt and pepper, to taste.
4. To serve, spoon several tablespoons of the shrimp and vegetable mixture into the center of a lettuce leaf, taco-style. Serve the shrimp lettuce wraps along with the remaining cooking juice if you like. Don’t forget to dip in the peanut sauce — Enjoy!

Tips for cooking shrimp
- Make sure your shrimp are deveined. Deveined shrimps taste better, and the doneness of the shrimp is easier to judge because there’s more exposed surface area.
- Make sure all of your shrimp are the same size. Do not mix up bags of frozen shrimps with different sizes because some will be just cooked when the others are overdone. Also, throw them to the pan at the same time, without overlapping.
- How long to cook shrimp? Shrimp cook very quickly so do not turn your attention to anything else while they’re on the heat. Only a few minutes are necessary for even the largest shrimp to start turning pink and curling up into a C shape, meaning they are almost done.
