1. To make the chicken spinach cauliflower salad: In a large salad bowl, combine spinach, cauliflower rice, cranberries, almonds, parmesan, and diced chicken.
2. Combine chipotle mayo, olive oil, heavy cream, and grated ginger in a small jar and drizzle over the chicken salad, then toss to combine.

Tips for making easy healthy lunches
- You can prepare most of the salads ahead of time: cut dry ingredients (veggies, cheese, nuts, cooked meat etc…) and keep them in an airtight container. Then add the wet ingredients at the last minute or when you pack up your meal preps containers: citruses, avocado, dressings, oil, vinegar etc…
- Plan for the coming week: most of our lunch recipes can be kept in the refrigerator for up to 2 or 3 days, so you can take some time during the weekend to prepare your weekly lunches.
- We’re huge fans of glass containers for packing our lunches as they’re great for reheating in the microwave, they don’t smell over time, and they are dishwasher-proof. Containers with dividers are great to keep certain components of your meal separate.
- You’re most likely to prepare a healthy lunch if you make it right after you eat dinner so that you won’t be hungry when making food choices for the next day’s lunch.
