- 1lb (450g) ground chicken
- 1 tablespoon chopped scallion
- 1 teaspoon chopped parsley
- 1/2 teaspoon salt (or crumbled bouillon cube)
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon chili pepper flakes, optional
- 2 tablespoons fresh garlic, minced
- 1 small cucumber, sliced
- 1/2 avocado, diced
- 7 oz (200g) cherry tomatoes, halved
- 2 lemon slices, for garnish
- 2 tablespoons chipotle aioli, divided

Directions
1. To make the garlic herbs chicken patties: Combine all ingredients for the chicken patties (ground chicken, scallion, parsley, garlic, salt, cayenne, and chili flakes) in a medium-sized bowl and gently mix until everything is evenly combined. Do not overwork, so you’ll get a better texture.
2. Heat 1 tablespoon oil and 1 teaspoon butter in a skillet over medium-high heat and divide the chicken mixture into six equal parts. Flatten gently to form the chicken patties, then sear the chicken patties in the skillet for 5-8 minutes per side or until internal temperature reaches 160ºF (71ºC). Make sure to give a good sear to the chicken patties so they’re crispy on the outside and soft on the inside. Remove from the skillet and set aside.
3. In three meal prep containers, arrange two chicken patties in each container and divide the vegetables. Add a lemon slice and a dollop of chipotle aioli on the side. Enjoy your meal prep garlic herbs chicken patties for lunch!
