Super nourishing and packed with flavor, this roasted potato salad is the perfect summery side dish to you BBQ menu, plus it is incredibly easy to make! Roasted potatoes are tossed with bell peppers, corn, red onion, grape tomato, and jalapeño. A smooth cilantro dressing adds a refreshing finish.

Ingredients list for the roasted potato salad
Potatoes:
- 3-4 mixed medium yellow potatoes and red potatoes, cubed into ½ in squares, approx. 2 cups chopped
- 1 teaspoon fresh thyme
- 1 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
Produce:
- ½ orange bell pepper, diced
- ½ green bell pepper, diced
- 1 jalapeño, sliced
- 1½ cups fresh corn
- ½ cup fresh cilantro, chopped
- 1 cup grape tomatoes, halved
- 1 red onion, thinly sliced
- Salt & pepper to taste, optional
Cilantro Dressing:
- ½ cup fresh cilantro, finely chopped
- 1 tablespoon mayonnaise
- 1 teaspoon red wine vinegar
- Juice of one lemon
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon whole grain mustard
- Salt & fresh cracked pepper, to taste

Directions
1. To make the dressing, combine all ingredients in a bowl, or a tight sealing jar, whisk or shake until well combined.
2. Pre-heat your oven to 420°F (220°C). Add diced potatoes to a bowl. Toss with olive oil, fresh thyme leaves, paprika, salt and pepper to taste.
3. Spread potatoes on a large baking sheet in a single layer and bake for 20 minutes, stirring every 10 minutes, until crisp on the outside and tender on the inside.
4. Once potatoes are roasted, remove from oven, allow to cool for 5 minutes, then add to a large serving bowl with all other ingredients.
5. Pour dressing over salad, toss gently until combined. Serve at room temperature or chilled. Yum! ♥︎
Note:
- You can use a hand blender to get a smoother dressing.
- For a lighter version of the sauce, replace mayo by greek yogurt
