Tips for the spinach chicken salad
- If you have a grill or barbecue and some time available, go ahead and grill your chicken breasts or chicken tenders, after a good spice rub of course! Chicken will be more tender, smoky and juicy.
- You can buy riced cauliflower in bags, or simply make your own cauliflower rice by using a box grater and grate quartered cauliflower chunks. It’s quick and very easy!
- If you’re not a fan of chipotle mayo (because of mayo… ok we understand), a good dash of sriracha is a good substitute.
- This spinach chicken salad is the perfect solution to an easy dinner, but will also make wonders for your picnics or potlucks. You can prepare it up to a day in advance, keeping it in the refrigerator until you are ready to serve.
