1. To make the chicken spinach cauliflower salad: In a large salad bowl, combine spinach, cauliflower rice, cranberries, almonds, parmesan, and diced chicken.

2. Combine chipotle mayo, olive oil, heavy cream, and grated ginger in a small jar and drizzle over the chicken salad, then toss to combine.

3. Season with salt and pepper, then serve the chicken spinach salad with cauliflower immediately. Enjoy!

Tips for the spinach chicken salad

  • If you have a grill or barbecue and some time available, go ahead and grill your chicken breasts or chicken tenders, after a good spice rub of course! Chicken will be more tender, smoky and juicy.
  • You can buy riced cauliflower in bags, or simply make your own cauliflower rice by using a box grater and grate quartered cauliflower chunks. It’s quick and very easy!
  • If you’re not a fan of chipotle mayo (because of mayo… ok we understand), a good dash of sriracha is a good substitute.
  • This spinach chicken salad is the perfect solution to an easy dinner, but will also make wonders for your picnics or potlucks. You can prepare it up to a day in advance, keeping it in the refrigerator until you are ready to serve.
