How to Prep Asparagus for Roasting

Mae sure to wash the asparagus before cooking. Pat the asparagus dry with paper towels.

The thick ends of asparagus can be tough and woody. To remove those parts, cut 1 or 1-1/2 inches from the base with a sharp knife. If your asparagus is extra-thick, use a vegetable peeler to peel off the hard part of the stem.

How to roast asparagus

Roasting asparagus is simple and quick! Toss asparagus with paprika, salt, and pepper. Then drizzle with a mixture of melted butter, lemon juice, garlic powder, parmesan, and Italian seasoning. We do this directly on a rimmed baking sheet while the oven is preheating to 400ºF (200ºC).

Bake until the asparagus is tender approx 15-20 minutes for thick asparagus, 10 minutes for super thin asparagus.

Serve the roasted asparagus immediately, garnished with fresh chopped parsley and lemon slices.
