Directions
1. To make vanilla pancakes: Combine flour, sugar (or sweetener), baking powder, baking soda, and salt in a large bowl. Make a well in the center and add milk, melted butter (lightly chilled to avoid cooking the egg), vanilla extract, and egg.
2. Whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix until smooth–a few lumps are ok. The batter will be thick and creamy. You can add milk little by little if your batter is too thick. Set the pancake batter aside and allow it to rest while heating your pan or griddle.
3. Heat a nonstick pan or griddle over low-medium heat and wipe it with butter. Pour 1/4 cup of batter onto the hot pan and spread out gently into a heart-shaped mold with the back of a spoon. Depending on the mold, make sure the pancake isn’t too thick.
4. When the underside of the pancake is golden and bubbles appear on the surface, remove the mold, flip the pancake with a spatula, and cook until golden. Repeat the same process with the remaining batter. Make sure to clean the heart-shaped mold from any stuck bits and butter the inside of the mold between each pancake.
5. Top the Valentine’s Vanilla Pancakes with honey, maple syrup, jam, sliced fruit, ice cream, or whipped cream. Enjoy! ❤️
