Preparation time:
15 minutes
Cooking time: 20 minutes
Equipment: a large saucepan, a frying pan

Ingredients list: Spaghetti and Vegetable Stir-Fry 

Serves: 4 

  • 1/2 lb (200g) cherry tomatoes
  • 2 balls of mozzarella
  • 1 yellow pepper
  • 1 eggplant
  • 1 red onion
  • 1 lb (400g) pasta
  • A cube stock
  • Olive oil
  • Pepper
  • 1/2 bunch of basil

Directions

Cook pasta in a large pot of boiling water with the stock cube, according to the pasta package directions.
Meanwhile, peel and mince the onions, then sauté them in a pan with a little olive oil.
Seed the pepper and cut it into strips. Wash and dry the eggplant and cut it into small cubes.
Add eggplant, peppers, and cherry tomatoes to the pan, then cook everything for 15 minutes.
When pasta is cooked, drain it and add it to the vegetables, add pepper, and mix.
Stir-fry spaghetti and vegetables for 3 minutes.

Chop the basil and cut the mozzarella into cubes, take them off the heat, and mix well.

Serve immediately.
