Here’s a recipe for a quick lunch. Not very presentable but still good and very simple to do!
Preparation time: 15 minutes
Cooking time: 20 minutes
Equipment: a large saucepan, a frying pan
Ingredients list: Spaghetti Vegetable Stir-Fry
Serves: 4
- 1/2 lb (200g) cherry tomatoes
- 2 balls of mozzarella
- 1 yellow pepper
- 1 eggplant
- 1 red onion
- 1 lb (400g) pasta
- A cube stock
- Olive oil
- Pepper
- 1/2 bunch of basil
Cooking instruction: Spaghetti Vegetable recipe
Cook pasta in a large pot of boiling water with the cube stock, according to the pasta package directions.
Meanwhile peel and mince onions and make them sauté in the pan with a little olive oil.
Seed the pepper and cut it into strips. Wash and dry the eggplant and cut it into small cubes.
Add eggplant, peppers and cherry tomatoes in the pan and cook the whole stuff for 15 minutes.
When pasta is cooked, drain and add to vegetables, add pepper and mix.
Stir-fry spaghetti and vegetable for 3 minutes.
Chop the basil and cut mozzarella into cubes, add them off the heat and mix well.
Serve immediately.
