Ingredients you need for the Raspberry and Peach Sugar Cookies
Directions
1. Preheat the oven to 350°F(180°C). Cream together the butter and sugar with a mixer until smooth. Beat in the vanilla extract and egg.
2. In another bowl, combine flour, salt and baking powder and mix together.
3. Add the dry ingredients to the wet ingredients step by step and continue using the mixer until everything is combined and the mixture becomes crumbly.
4. Wet your hands and knead it by hand. Separate it into 2 or 3 dough balls. Cover the remaining dough balls with plastic wrap while you are rolling.
5. Place the dough on a floured surface, sprinkle a small amount of flour on top to keep the rolling pin from sticking and roll it out until it’s about ¼” thick.
6. Using your favourite cookie cutters, cut out the shapes by pairs, making a hole on the shape that will come on top . Use a spatula to transfer the shapes to a baking sheet lined with parchment paper.
7. Bake at 350°F(180°C) for 8 to 10 minutes, until slightly golden on the edges.
8. Spread jam on plain cookies and stack an hollowed cookie on top. Dust with castor sugar.
