How To make the cream cheese cookies:
1. Line a baking sheet with parchment paper.
2. Cream butter and cream cheese with a whisk or an electric mixer.
3. Add sugar and beat for 1 minute. Add egg and beat to combine. Add vanilla extracts and beat the dough until combined. Add in baking powder and the flour (in three times), mixing to combine.
4. Once incorporated, refrigerate the dough for at least an hour, covered.
5. Preheat your oven to 375ºF (190ºC). The dough can be sticky, so dust your hands with flour to roll out 1-2-inch balls. Arrange the balls on the prepared baking sheet.
6. Gently flatten the balls using your fingers or the bottom of a glass. Don’t flatten too much; the cream cheese cookies won’t puff up otherwise.
7. Bake the cream cheese cookies for 9-11 minutes. Remove the cookies from the oven when the underside edges turn golden. This might vary for your oven, so watch these cookies carefully.

Delicious and easy to make, one bowl, one fork, one cookie sheet and 15 minutes. I didn't have parchment paper so I placed them straight on an ungreased non-stick cookie sheet. They came out perfect, very soft and puffy.
