- 1 stick (115g) unsalted butter, softened
- 4 ounces (120g) cream cheese, at room temperature
- 1 cup granulated white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 3/4 cup all-purpose flour

Directions
1. To make the cream cheese cookies: Line a baking sheet with parchment paper. Cream together butter and cream cheese with a whisk or an electric mixer.
2. Add sugar and beat for 1 minute. Add egg and beat to combine. Add vanilla extracts and beat the dough until combined. Add in baking powder and the flour (in three times), mixing to combine.
3. Once incorporated, refrigerate the dough for at least an hour, covered.
4. Preheat your oven to 375ºF (190ºC). The dough can be sticky so dust your hands with flour to roll out 1-2 inch balls. Arrange the balls on the prepared baking sheet. Gently flatten the balls, using your fingers or the bottom of a glass. Don’t flatten too much, the cream cheese cookies won’t puff up otherwise.
5. Bake the cream cheese cookies for 9-11 minutes. Remove the cookies from the oven when you see the underside edges turning golden. This might vary for your oven, so watch these cookies carefully. Allow cooling down on a wire rack and dust the cream cheese cookies with icing sugar, if you like. Enjoy!

Tips for the cream cheese cookies
- Do not use light, fat-free, or a whipped cream cheese because your cookie dough will become runny and spread when baking.
- Keep in mind that the dough does need to be refrigerated for at least an hour. This will help the cream cheese cookies keep their shape and puff up slightly when baking.
