While roasting cauliflower is certainly our favorite way of preparing it, roasting a whole head of cauliflower can be cumbersome on certain occasions, especially if you’re making a simple side dish. Roasting cauliflower florets, on the other side, offers delicious flavors and paired with garlic and Parmesan creates an irresistible side dish.

Baked cauliflower goes great with fresh garlic and Parmesan cheese and pretty much all spices you want to use, but for this recipe, we keep it simple using only salt and fresh cracked pepper. You only need a handful of ingredients to make these crunchy-tender roasted cauliflower bites, making them the perfect side dish for the holidays.

How to roast cauliflower

The method to roast cauliflower is very simple and easy. Anyone can do it! First, preheat your oven, cut the cauliflower into florets and rinse. Prepare a large baking sheet.

Place cauliflower pieces in a bowl and add olive oil, Italian seasoning, garlic, Parmesan, salt, and pepper. Toss to coat the cauliflower florets evenly.

Directions

1. To make the roasted cauliflower: Preheat your oven to 400ºF (200ºC). Cut the cauliflower head into florets, and rinse in a colander. Prepare a large baking sheet –  you can line it with parchment paper if you like.

2. Pat the cauliflower florets dry with paper towels and place them in a large salad bowl. Add olive oil, Italian seasoning, garlic, Parmesan, salt, and pepper. Toss gently to coat the cauliflower florets evenly.

3. Place cauliflower florets on the prepared baking sheet, spreading evenly into one layer. Bake the garlic parmesan cauliflower florets on the center rack of your oven for 25 to 30 minutes – Adjust the time depending on your oven, the cauliflower should be golden brown and crisp on the edges. Use a fork to check cauliflower for doneness, it should easily pierce the cauliflower pieces.

4. Transfer the parmesan roasted cauliflower florets to a large serving bowl and sprinkle with fresh chopped parsley if you like. Enjoy! ❤️

  • Make sure to cut the cauliflower florets into the same-size pieces to achieve a regular texture.
