  • 1 good quality puff pastry sheet  (or homemade puff pastry)
  • 1/2 cup walnuts
  • 1/2 cup pecans
  • 1/2 cup almonds
  • 1/4 cup honey
  • 1/4 cup granulated sugar

Directions

The nut filling
1. In a food processor, grind walnuts, almonds, and pecans until they break into tiny crumbs. Do not over-process. Transfer to a bowl and combine the ground nuts with 1/4 cup honey, and 1/4 cup granulated sugar. Set aside.

Assembling the cookies
1. When ready to bake the cookies, preheat your oven to 375°F (190°C).

2. Sprinkle your work surface generously with powdered sugar and roll out the puff pastry. Spread the filling in a thin layer evenly over the surface of the puff pastry sheet. Make sure it goes right up to the edge. Refrigerate for 10 minutes.

3. Using a pizza cutter or sharp knife, slice the dough into 1/3-inch (1cm) strips. Fold the strips of dough accordion style, start with a large amount and narrowing as you go until you reach the end to form the tree shape. Secure with a skewer and transfer to a parchment-lined baking sheet. If the puff pastry becomes too soft, just refrigerate for a couple of minutes and continue the process.

4. Once done, refrigerate cookies on the baking sheet for 10-20 minutes.

5. Bake the cookies until golden-brown and puffed about 20 minutes. Allow to cool on the baking sheet for 5 minutes; then transfer to a wire rack until completely cooled. Enjoy!

Note:

  • You’ll get better results with a very good quality puff pastry, made with 100% butter.
  • You can store the cookies in an air-tight container at room temperature for about a week.
