How to cook a lamb shank in a CrockPot

1. To make the slow cooker lamb shank: Stir together the chicken or beef stock, chopped onion, apricots, raisins, tomato paste, honey, salt, cumin, coriander, cayenne, garlic, and cinnamon sticks into a 4 or 6-quart slow cooker.

2. Heat a skillet over medium-high heat and brown the lamb shank, turning occasionally, until browned on all sides, about 8-10 minutes. Add the browned lamb shank to the slow cooker with the other ingredients. Cover the crockpot and cook on LOW until the lamb is tender and meat “falls off the bone”, about 8 hours.

3. Turn off the slow cooker, remove the cinnamon sticks, stir in the cilantro, and lemon juice just before serving the slow-cooked lamb shank. Enjoy!
